What is the difference between white cheddar and yellow?
They say there is no difference in taste, it’s only annatto food coloring. But, I swear the white tastes better. With this white macaroni and cheese recipe, however, I use queso blanco cheese for the white macaroni and cheese.
Should I rinse macaroni for mac and cheese?
No. If you rinse the macaroni after cooking it, you will get rid of the starches that actually help to bind the cheese to it. You typically will rinse pasta for cold pasta salads.
Should you salt your pasta water?
Yes. always do, so that when you bite into the pasta, it isn’t bland and has a “taste”.

White Shells and Cheese
Equipment
- Sauce Pans
- 8 x 8 Baking Dish
Ingredients
- 3 Quarts Water
- 12 Oz Shell Macaroni
- 8 Oz Queso Blanco Cheese, Cubed Can sub with white cheddar (sharp or mild)
- 1 Cup Whipping Cream
- 1/4 Cup Bread Crumbs
- 1 Cup White Cheddar, Shredded
Instructions
- Pour water into a large sauce pan and bring to a boil. While waiting for the water to boil, dice the cheese.
- Once water starts to boil, pour noodles in. Cook for 12 minutes or until tender. Drain in a colander and set aside.
- Preheat oven to 400°.
- In the same sauce pan, add the cheese and cream. Stir together.
- Pour the drained noodles on top of the cheese and stir until melted.
- Add mac and cheese into an 8 x 8 baking dish.
- Sprinkle bread crumbs on top.
- Bake at 400° for 20 minutes.
- Remove from oven. Sprinkle white cheddar cheese on top of bread crumbs. Place back in oven for 5 more minutes.
- Remove from oven. Let sit/cool for 5 minutes before serving.

Howdy Francesco!! You could use any type of processed cheese, such as Velveeta. Did you know that it comes in a pouch now? No need to cut/dice it up. If you choose to use any type of cheddar, just remember you’ll need either milk or cream for the right consistency.
