Bacon Fried Onion Cheeseburger

This Bacon Fried Onion Cheeseburger is a bacon cheeseburger on steroids—in the best way possible. Juicy ground beef, crispy fried onions, smoky bacon, and melty cheese are mixed right into the patty, so every single bite is packed with flavor before you even add the bun, toppings, or sauce.

OMGosh, this little guy rocked! I started with my previous French Fried Onion Burgers and took them to the next level by adding bacon and cheese straight into the mix. It is the kind of burger that tastes like backyard cookout food, diner comfort food, and game-day food all rolled into one.

Are you on a low carb diet? These only have 3 carbs total if you have them without the buns.

Fun Facts About This Burger

  • French fried onions do double duty: they add crunch on the outside edges and savory onion flavor throughout the patty.
  • Bacon brings smoky, salty flavor, which means you do not need a long list of seasonings to make the burger taste big.
  • Mixing cheese into the meat helps keep the burger rich and tender, especially if you are cooking it a little closer to well done.
  • This burger is easy to make low carb—just skip the bun and serve it over lettuce, in a bowl, or with grilled vegetables.

Tips and Tricks for the Best Bacon Fried Onion Cheeseburger

  • Use 80/20 ground beef for the best flavor and texture. Leaner beef can dry out faster and may make the burger feel crumbly or mushy.
  • Do not overmix the meat. Combine the beef, bacon, cheese, and fried onions just until everything is spread through the mixture.
  • Make a small thumbprint in the center of each patty before cooking. This helps the burger cook more evenly and keeps it from puffing up in the middle.
  • Chill the patties for 10–15 minutes if they feel soft. A short rest in the refrigerator helps them hold together better on the skillet, griddle, or grill.
  • Let the burgers rest for a few minutes after cooking so the juices settle back into the meat instead of running out on the first bite.

Why are my burgers mushy?

Lean meat can be lacking in flavor AND texture. Use more fatty meat (80/20) and using a binder, such as the cheese (or eggs or bread crumbs), the burger should turn out better.

How do you add flavor to a burger?

Try to add Worcestershire or steak sauce. Or, seasonings/herbs help with flavor as well. But, if you follow this recipe, you’ll find some flavor.

How do you tell if a Bacon Fried Onion Cheeseburger is done?

The safest way to check doneness is with a meat thermometer. Ground beef should reach 160°F in the center. If you do not have a thermometer, press gently on the burger with a spatula. Reddish juices usually mean it needs more time; clearer juices mean it is closer to done. Because color can vary, a thermometer is still the best trick.

Serving Ideas

Pile this burger on a toasted bun with lettuce, tomato, pickles, grilled onions, or your favorite burger sauce. For a low carb plate, serve it bunless with a side salad, roasted broccoli, cauliflower tots, or a pickle spear. It is also great chopped over a salad with ranch, mustard, or a little barbecue sauce.

Make-Ahead and Storage Tips

You can shape the patties a few hours ahead and keep them covered in the refrigerator until you are ready to cook. Leftover cooked burgers can be stored in an airtight container in the refrigerator for up to 3–4 days. Reheat gently in a skillet, air fryer, or microwave so the cheese does not get too tough.

  1. Can these be cooked on a grill?

    • Sure they can, but you may want to put foil under them. The cheese will melt and drip. Great question!! Thanks for stopping by and checking us out!!

      Have a great day!

    • I’m like your kids then 🙂 If I’m real hungry, I’ll grab a can and munch on them while I’m cooking dinner, to hold me over. Hope you liked them as much as I did. Thanks so much for checking them out.

      Have a great week!
