Simple Egg Salad Finger Sandwiches

Eat these Egg Salad Finger Sandwiches for lunch. They also make for great appetizers or just to have around to snack on, which was my case.  I was craving me some Egg Salad, so I decided to share my recipe.  It’s so simple.  I don’t add a bunch of extra stuff so I can actually enjoy the Egg Salad itself.

Do you like Deviled Eggs? If so, you’ll like this Egg Salad too.  I used the same ingredients that I use in my Deviled Eggs.  The only difference is the egg white is chopped up and mixed in with the “filling”.  Speaking of, my daughter was making gross sounds when she found out I was making Egg Salad.  I was like, “What, you don’t like Egg Salad?”  Guess I never really paid attention to that one. She says, “Nope, that stuff is nasty.”.  “Really?”, I asked, “Then why do you beg for my deviled eggs?” She says, “Cuz I like your deviled eggs”.  I could go on with our conversation, but to make a short story shorter…..I explained it was basically the same.  She ate one and moaned.  Literally moaned.  Then went in for another.  Uh huh….she likes them.  Crazy girl.

Secret Ingredient?

I use a secret ingredient in my deviled eggs and my egg salad.  Some of you may know and use this secret ingredient already.  But for those of you who don’t.   And, I’m going to give you a great way to boil your eggs so you can peel them easier.

Simple Egg Salad Finger Sandwiches

Equipment

  • Sauce Pan

Ingredients

  • 8 Eggs
  • 1 Tbsp Vinegar
  • 1 Tbsp Salt Could reduce
  • 1 Cup Miracle Whip
  • 1/2 Tbsp Dill Pickle Juice
  • 1 Tbsp Mustard
  • 1/2 Tbsp Salt
  • 1 Tbsp Pepper
  • 1 Tbsp Paprika
  • 14 Slices Bread

Instructions

  • To boil eggs – Place the eggs in a medium saucepan. Add enough water to cover the eggs completely. Add the vinegar and the tablespoon of salt. Bring to a boil. Once boiling (about 5 minutes), turn the heat off, cover and let sit in hot water for 10 minutes. Then drain the water and fill the pan up with cold tap water. Let sit for about 10 minutes then remove the eggs from the water and place on a towel to dry for about 20 minutes to cool.

  • To make the egg salad – Peel and chop the eggs in a medium size bowl.
  • Add in the miracle whip, pickle juice, mustard, salt, pepper and paprika. NOTE: You can reduce the amount of seasoning if you like. Stir until combined.
  • Add 3 HEAPING tablespoons on 7 slices of bread. Spread out evenly. If you have any egg salad left, just eat it.

  • Place a slice of bread on top. **You could just eat the sandwich now 🙂
  • *Optional – Cut the crust off each sandwich.

  • Cut in 3 sections. Serve!
