Pull up a chair, grab a big serving spoon, and let’s talk about a cookout classic that deserves a permanent spot beside the BBQ: Southern Macaroni Salad. This is the kind of cold, creamy side dish that shows up at backyard dinners, potlucks, family gatherings, and “just because we grilled tonight” meals. It’s simple, comforting, and full of little bites of texture from tender macaroni, boiled eggs, and cool cucumber. The best part? It tastes even better after it has had time to chill, which means you can make it ahead and let the refrigerator do some of the work.
If you love side dishes that are easy to mix together, budget-friendly, and always welcome on the plate, this Southern Macaroni Salad is one to keep in your recipe box. It pairs beautifully with grilled meats, hamburgers, hot dogs, ribs, chicken, sandwiches, and even a simple weeknight supper. The boiled eggs give it that Southern-style richness, while the cucumber keeps the whole bowl tasting fresh and crisp.

Why you’ll love this recipe
- It is made to serve cold, so it is perfect for warm-weather meals and cookouts.
- The hard-boiled eggs make it heartier than a plain macaroni salad.
- The cucumber adds a fresh crunch that balances the creamy dressing.
- You can make it ahead, chill it, and let the flavors come together before serving.
- It is flexible, so you can add or leave out extras depending on what your family likes.
Fun facts about macaroni salad
- Macaroni salad is one of those dishes that changes from kitchen to kitchen. Some families add sweet pickle relish, some add onion or celery, and some keep it simple with eggs and a creamy dressing.
- Southern-style versions often lean into comfort-food ingredients like hard-boiled eggs and a creamy, slightly tangy dressing.
- Cold pasta salads are popular for gatherings because they can be prepared ahead of time and served straight from the refrigerator.
- Rinsing cooked macaroni is helpful for cold salads because it cools the pasta and removes extra starch that can make noodles stick together.
Do you eat macaroni salad cold or hot?
You can technically eat macaroni salad either way, kind of like potato salad. It depends on how you like it. However, this recipe was made to be eaten cold, and that is when it really shines. A chilled macaroni salad gives you a creamy, cool bite next to smoky BBQ, grilled chicken, burgers, ribs, or hot dogs.
How long can you leave macaroni salad in the refrigerator?
My recipe calls for allowing the macaroni salad to chill 4 hours before serving, but you could do that in as little as 2 hours if you are short on time. For best quality, store leftovers in an airtight container in the refrigerator and enjoy within 3 days. If you are serving it outdoors, keep it chilled until it is time to eat and return leftovers to the refrigerator as soon as possible.

Should you rinse the macaroni?
For this type of cold dish, you should rinse the macaroni for a couple of reasons. It helps cool the macaroni noodles before mixing them with the other ingredients, and it rinses off extra starch from boiling. That helps keep the noodles from clumping together in the salad. If this were a warm pasta dish, then I would not rinse the noodles because the starch helps the sauce stick.
How do you make Southern Macaroni Salad?
Check out the recipe below. The main difference between Southern style and classic style is the addition of hard-boiled eggs, which give the salad extra richness and texture. You can always eliminate and/or add the “extras” based on what you have on hand. Diced celery, sweet pickle relish, red onion, bell pepper, or a sprinkle of paprika on top can all make this recipe feel a little different each time.

Tips and tricks for the best Southern Macaroni Salad
- Cook the pasta just right. You want the macaroni tender, but not mushy. Overcooked pasta can break apart once you stir in the dressing.
- Drain it well. After rinsing, let the macaroni sit in the colander for a few minutes so the salad does not turn watery.
- Chill before serving. The flavor gets better as everything sits together, so give it at least a couple of hours if you can.
- Taste after chilling. Cold foods sometimes need a little extra seasoning, so give it a final taste before setting it on the table.
- Keep it creamy. If the pasta absorbs some of the dressing while chilling, stir in a small spoonful of mayonnaise right before serving.
- Make it your own. Add a little diced pickle, onion, celery, or bell pepper for more crunch and flavor.
Serving ideas
Serve this Southern Macaroni Salad with anything that comes off the grill. It is especially good with BBQ chicken, smoked sausage, burgers, hot dogs, pulled pork, grilled pork chops, or a plate of ribs. For a lighter meal, serve it with sandwiches, wraps, or a big green salad. It also travels well for potlucks as long as you keep it cold on the way there and store it in the refrigerator until serving time.

I loved this salad. I added celery and onion flakes instead of chopped onion. My family asked me to make it again instead of my usual macaroni salad.
That sounds awesome and I’ll have to do that next time I make it. Appreciate the idea!!!
