Breakfast Egg Casserole

This easy breakfast casserole is loaded with bacon, sausage, shredded hash browns, eggs, cheese and a secret ingredient. Perfect to make ahead of time, then pop it in the oven in the morning!

You can definitely make this breakfast casserole the night before. Casseroles are definitely one of those meals that you can make the night before to save time in the morning. You might consider adjusting the baking time. Add the cheese just prior to baking.

Breakfast Egg Casserole

Equipment

  • Electric Griddle OR
  • 8×8 baking dish or 8×8 cake pan

Ingredients

  • 6 Eggs
  • 1/2 Cup Milk
  • 1/4 Cup Pancake batter secret ingredient
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 6 Slices Bacon Pork or Turkey
  • 5 Patties Sausage Pork or Turkey
  • 1 Cup Shredded Potatoes, Frozen
  • 1 Cup Cheddar Cheese, Shredded

Instructions

  • Preheat oven to 400°. Spray an 8×8 casserole dish with cooking spray.
  • Cook bacon and sausage. Set aside to cool somewhat.
  • Beat eggs, then mix in the milk, pancake batter (not powdered), salt, pepper.
  • Crumble up the bacon and sausage. Add this and the shredded potatoes to your egg mix. Pour into the casserole dish. **If you want cheese, add it now as well.

  • Cook @ 400° for 30 minutes, depending on your oven. When a knife inserted in the middle comes out clean, it's done.

Notes

Pour some peppered country gravy over it for added yumminess.
