Fruit punch poke cake is made with cake mix, fruit punch and a pineapple/coconut icing that soaks through the cake.

How do you poke a poke cake?
After cake is done and cooled, you can either use a fork or the end of a wooden utensil and poke holes in the cake every 1/2″ or so. You can do it more if you want that many holes in it, or less if you don’t want more of the icing sitting on the top of the cake.
Can you add pudding to cake mix?
I almost always add pudding mix to a cake mix. The pudding mix makes the cake come out more moist.
How long can cake sit out un-refrigerated?
If you used ANY items from the fridge to make the cake, the cake should not sit out more than 2 hours. This fruit punch poke cake will last in the fridge for up to 5 days.

Fruit Punch Poke Cake
Equipment
- 9×13 Baking dish
- Stand Mixer/Hand Mixer
- Sauce Pan
Ingredients
- 15.25 Oz Yellow Cake Mix
- 3.4 Oz Vanilla Instant Pudding Mix
- 3/4 Cup Cooking Oil
- 4 Eggs
- 10 Oz Fruit Punch Can Alternate
- 3 Eggs, beaten For Icing
- 1 1/2 Cup White Sugar For Icing
- 1 Stick Margarine or Butter, softened For Icing
- 1 Cup Pineapple, Crushed, Undrained For Icing
- 1/2 Cup Coconut, Shredded For Icing
- 2 Tbsp Flour For Icing
Instructions
- Preheat Oven to 350°. Grease/Flour or use cooking spray on 13×9 cake pan/baking dish.
- Mix cake mix, vanilla pudding mix, cooking oil and 4 eggs.
- Add Fruit Punch. I used Hawaiian Fruit Punch.
- Pour into 13×9 greased cake pan. Cook for 40-45 minutes, or until done.
- About 15-20 minutes before the cake should be done, start making the icing.
- Beat 3 eggs. Add in the flour, sugar & margarine. I use my mixer to mix it faster, but you can do the mixing in a sauce pan.
- Pour mixture into a sauce pan and cook on low heat until thick. Stirring constantly.
- Once the mixture has thickened, add the pineapple and coconut. Stir until blended well.
- Take the cake out of the oven when done. Poke holes in the cake. I used the end of a wooden spoon, but you could use toothpicks, skewers, anything to make the holes the size you want and allows the icing to soak through.
- Pour icing over the hot cake . If you're going for looks, try to cover the "holes" you poked with the pineapple and coconut.
- You can serve immediately, or wait till the icing soaks through to make that cake more moist.
Someone just pointed out to me that I left the flour off the ingredient list. When you asked about it, I assumed you meant the “cake” part. I’m truly sorry I didn’t snap. I have corrected it.

I just made this cake and realized during the process that there is good reason for the old adage of “always read the entire recipe before you begin to make it.” The icing part of this recipe is completely confusing because it calls for flour, yet in a response to a comment you say there isn’t any added flour. So, while my cake is in the oven, almost to the time where I need to begin making the icing, I’m doing a hectic Google search for a cooked pineapple-coconut icing.
The cake does look and smell amazing and I think this could be a winning shared recipe for many in the issues are corrected in the posted recipe.
