CAKE MIX COFFEE CAKE – DOUBLE LAYER

This Cake Mix Coffee Cake is like one big fluffy snickerdoodle in cake form.  Never really thought that till now.  Coffee cake brings back so many memories for me.  My mom use to make coffee cake when I was young, probably what started my love for cinnamon.  Then my sisters started making it and I joined in when I was a teenager.  I had totally forgot about it till years (not telling how many) ago.  So, I called my Mom and both my sisters to get the recipe.  No one had it. wah wah wah. So that began my search.  I found something close and have tweaked it and, as lazy as I can be when it comes to cooking or baking, I added a cake mix into it. I think I may have found the closest thing.

Now, this is normally one layer and it’s usually made in a cake pan that is 13×9. I doubled the cinnamon/brown sugar mix to accommodate two layers. It makes it twice as cinnamon-y. I also knew that making it in two 8″ round pans that I would either have to put the cinnamon/brown sugar mix on bottom or very carefully flip them out and then back over.  I chose the latter of the two.  If you go this route, you might want to have something to catch some of that sugar mix that will inevitably fall off.  But as you can see….I did it …yay me!!!

Cake Mix Coffee Cake – Double Layer

Coffee Cake made with cake mix with cinnamon sugar on top both layers.

Equipment

  • Stand Mixer/Hand Mixer
  • Round Cake Pans x2

Ingredients

  • 18.25 Oz Yellow Cake Mix 1 box
  • 6.8 Oz Instant Vanilla Pudding 2 boxes
  • 4 Eggs
  • 1 Cup Oil
  • 1 Cup Water
  • 2 Cup Brown Sugar
  • 2 Tbsp Cinnamon

Instructions

  • Preheat oven to 350°. Spray round cake pans with cooking spray.
  • Combine the cake mix, instant pudding, eggs, oil and water in a bowl and mix.

  • If you have a stand mixer, while the cake batter is mixing away, combine the brown sugar and cinnamon in a small bowl for the topping.
  • Pour the cake batter into 2 round cake pans evenly.

  • Add cinnamon/brown sugar mixture on top both.

  • Bake at 350° for 30-35 minutes. Cake is done when an inserted toothpick comes out clean (no batter). Let cool.
  • Once the pans are cool enough to handle, take a knife around the edges to separate the cake from the pan. With your (clean) hand on top of the cake, flip the cake over in your hand. This might take a little bouncing to get the bottom to give if stuck. Then flip the cake back over, sugar side up, on your serving dish. Repeat for the top layer.
