
Loaded Hash Brown Scramble
This Loaded Hash Brown Scramble is a perfect weekend morning breakfast. Takes a little time, but so totally worth it. I mean, just look at it. It is loaded with hash browns, bacon, sausage, onion and topped with shredded swiss cheese. Uh…yum!
This serves 4. You could always double this and serve a bigger crowd. Talk about a great brunch recipe too. Serve it with biscuits & fruit.
As I mentioned, I used swiss cheese. If you don’t like swiss cheese you can substitute for whatever cheese you like. Or, cut the cheese all together. You could also substitute the meat if you like. I know my oldest daughter would. She doesn’t eat pork, so she would go with the turkey bacon and turkey sausage.

Loaded Hash Brown Scramble
Equipment
Ingredients
- 2 Tbsp Oil
- 2 Cup Shredded Hash Browns
- 4 Slices Bacon
- 4 Patties Sausage
- 1/4 Cup Onion, Chopped
- 4 Eggs, beaten
- 1/4 Cup Milk
- 1 Cup Swiss Cheese, Shredded.
Instructions
- Cook bacon and sausage. Drain. Crumble.
- Cook Hash Brown and onions with oil in a skillet on medium low heat.
- Shred Cheese.
- In medium bowl, beat eggs, then add the milk. Stir.
- Add bacon and sausage in the egg mixture. **Sorry…thought I got a picture.
- Pour the egg mixture over the hash browns in the skillet. Turn the heat up to medium high heat.
- Cook until almost done.
- Once the egg is pretty much cook. Sprinkle the cheese on top and turn the heat off. Let sit 5 minutes. Serve.
