
SCRAMBLED EGG ROLLS
Iโm at it again. I will eventually stopโฆbut not looking good for the near future. I need to get some other recipes in here before I do another, right? Since I discovered how easy making egg rolls are, I have made many. Check them out here, here, here and here. My brain wonโt shut off and Iโm getting some good suggestions to try every time I make a new one. Keep them ideas coming folks! Iโll try it!
Last time, I made a dessert egg roll, Fried Apple Egg Rolls, so I thought Iโd try a breakfast egg roll. Hence the Scramble Egg Rolls. Pretty nifty concept, these egg rolls. You can put all kinds of stuff in them. Did I mention Iโm probably not done with them yet?
These consist of scrambled eggs, bacon, sausage and shredded cheese. Thatโs all.ย After making them and trying them, I do like them. But I thought I should have used more cheese, or a cheese sauce. It wasnโt dry, but could have been a little more moist.ย That being saidโฆwhat would you do with your scrambled egg roll??

Scrambled Egg Rolls
Equipment
- Electric Griddle OR
- Frying Pan
Ingredients
- 4 Eggs
- 2 Sausage Patties
- 5 Slices Bacon
- 1 Cup Cheddar cheese, Shredded
- 7 Egg Roll Wraps
- Vegetable Oil
Instructions
- Cook the sausage and bacon however you desire. I used my griddle. Drain on paper towels and crumble when it cools down.
- Beat your eggs. Spray your frying pan with cooking spray and add eggs. Then add your meat mixture. NOTE: You can add your cheese while scrambling your eggs if desired.
- Scramble and remove from pan. Place in small bowl.
- Turn skillet on medium high heat with enough oil to cover half the egg roll. Let heat up.
- Roll your egg rolls. See step by step pictures below.
- Fry for about 3-4 minutes on each side, until golden brown. Set on paper towels to drain oil after.

Breakfast! I love breakfast dishes! THey are cheap and we frequently have them for dinner. ๐ I love making things ahead too, like quiches. I bet these would warm well, what do you think?

This came up and in my personal opinion, I think they would be great warmed up, but I would use the oven/toaster oven. The microwave to make it soggy.

Hmm… this is really an interesting idea. I typically do frozen breakfast burritos for weekday ease, but I’m thinking maybe I could do these as a change up. Maybe freeze, and heat in the toaster oven. Could be a flop but worth a try maybe!
Hi Erin. I don’t think it would be a flop. But it’s the only way I would heat them up. I think the microwave might make them soggy. If you do try it, I’d love it if you would let me know.

I LOVE this one too! I wanted to eat it off the computer screen:) I’m not sure if you should have ever learned how to make egg rolls! They don’t have an E.R.A. (egg roll anonymous:) Not that I know of anyway! Keep ’em coming. I’m learning something new!
