Here’s the easy way to make a Lemon Bundt Cake from box cake mix that everyone will thinks is from scratch.  This secret can not only be used with this cake, but any cake you make.  I often get complimented on my “box” cakes because of these 2 things.  One, I always add a box of Jello instant pudding. Even if the box mix claims to have pudding in it, still add it.

Depending on the cake flavor depends on the pudding mix I use.  However, you can always fall back on vanilla flavored pudding if you don’t have any others. 

The second thing is beat/mix 3-4 minutes rather than the 2 minutes the boxes tell you.  The longer the better.

I promise you that it won’t taste like the regular box cake you are use to making.  And it doesn’t take tons of extra work at all.  Easy, just like we like it. Am I right?

Before we get on with the Lemon Bundt Cake recipe, I figured I would show you how I jacked the cake up when flipping it out of the pan. But as you can see below, it fell out in one piece and I was able to just set it back on and then ice it.

Lemon Bundt Cake

Cake Box recipe with optional added icing. You can use my icing recipe (listed in the recipe notes section below), or make your own icing or glaze. So easy, everyone will think you made this from scratch.
Course Dessert
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 1 hour 45 minutes
Servings 10 or so slices

Ingredients

  • 1 Box Lemon Cake Mix with required ingredients
  • 1 Box Lemon Instant Pudding Mix

Instructions

  • Preheat oven to 350○. Spray pan with cooking spray.
  • MIx the cake mix, with the required ingredients and the pudding mix.

  • Pour batter into your bundt pan.

  • Cook the required time listed on the box, give or take, depending on your oven.
  • Let cool for at least an hour, then flip out of pan onto desired dish. Can you tell I messed it up? Good thing it was all in one piece, it fit back nicely.

Notes

To make the icing shown:
Ingredients:
1/3 cup – Butter, softened
2 cups – Powder Sugar
4-5 TBSP – Milk
1 TSP – Lemon Extract
Mix all the ingredients until thoroughly mix and texture is smooth.  Add more milk if not thin enough for you.  Trade out the lemon extract for vanilla, if desired.

  31. I just printed the recipe. My husband loves this kind of cake, but only if it is store bought…he doesn’t think I am a very good cook, but….I do things like this…bake it and then say I bought it for him at the store today..he eats and loves it! Never heard of putting pudding in a cake mix!
