Crunchy Beef and Rice Casserole. I bet you’re wondering what’s crunchy in this, right?  If you can’t tell by the picture, it’s potato chips.  Yup, you read that right.  Have you ever had Tuna Casserole?  It has potato chips and that’s one of the best parts to me.  So, I put them in this casserole.  Worked out great.

Fairly easy recipe to make on a weeknight or weekend.  Only took about 15 minutes to prep, then pop in the oven for the remaining time.  That’s what so cool about casseroles.  They usually don’t take long to prep and you can either prepare side dishes, desserts or just get other chores done while it’s cooking.  Or better yet, you can sit on your toosh while it’s cooking and make everyone think you slaved over the hot stove making them dinner.

What’s in it?

All you need it ground beef, soup, boil in bag rice, shredded cheese, some corn and potato chips.  I used Cream of Chicken Soup, but I know most of you reading this will wonder why I didn’t use Cream of Mushroom.  I really don’t like mushrooms all that much. But by all means, use Cream of Mushroom if you like that better.  Or, Cream of Celery would have tasted pretty good too.

Crunchy Beef and Rice Casserole

Crunchy Beef and Rice Casserole. Ground beef, rice and corn with the added crunch of potato chips.

Ingredients

  • 1 Lb Ground Beef
  • 1 Bag Boil-in-Bag Rice
  • 1 Can (15.25 oz) Sweet Corn, drained
  • 2 Cups Potato Chips, crushed
  • 2 Cup Shredded Cheese
  • 1 Can (10.5 oz) Cream of Chicken Soup, Condensed
  • 2 Tbsp Milk

Instructions

  • Preheat oven to 350°.
  • Brown ground beef in a skillet. Drain.

  • While ground beef is cooking, cook rice as directed. Drain.

  • Mix ground beef, rice, corn, cheese, soup and milk in a medium/large bowl.
  • Stir in 1 1/2 cups of the crushed potato chips.

  • Spoon mixture into a casserole dish. This is not a huge batch, so a round dish or a 8×8 square dish will do.

  • Sprinkle remaining chips on top of mixture.
  • Bake in preheated oven for 20-25 minutes or until the edges are bubbling. Let cool -10 minutes before serving.

Notes

Can substitute cream of chicken soup for cream of mushroom soup. Or turkey for beef.
