Chicken Salad Pinwheels are a great appetizer to make for a good ole get together. Make them before so you’re not rushing the day of the party getting food together.

Can I make pinwheels the day before?
Yes. In fact, my recipe calls for chilling the chicken salad pinwheels in the fridge overnight for best results.
How long do pinwheels stay good?
These will last in the fridge, in an airtight container, for about 4 days considering what is in them. Some ingredients spoil quicker than others.
Can you freeze tortilla pinwheels?
You can freeze them. They will keep, however, they may lose some of their quality (texture/taste) if stored for too long. Store in an airtight container.

Chicken Salad Pinwheels
Ingredients
- 10 oz Chicken, cooked, chopped finely Can sub with canned chicken
- 1 Boiled Egg, Chopped
- 1/2 Cup Miracle Whip
- 1 Tbsp Pickle Relish optional
- 1 Tortilla, Large
- 1/2 Cup Lettuce, Shredded
- 1/4 Cup Cheddar Cheese, Shredded
- Salt & Pepper as desired
Instructions
- Chop up the boiled egg.
- Mix in the cooked chicken, miracle whip, pickle relish and salt & pepper to taste. Lick the fork/spoon.
- Lay the tortilla on top of plastic wrap. Top with the chicken salad mix. Spread a layer covering the tortilla. You can leave one edge without the chicken salad. As you roll, the “filling” will move towards the edge.
- Sprinkle the lettuce & cheese on top.
- Roll the tortilla up as tight as possible, but not so tight you squeeze the filling out. Wrap with plastic wrap.
- Refrigerate for at least 8 hours – overnight. Slice when ready.
