Brownies with Peppermint Icing

These Brownies with Peppermint Icing is not so much a recipe as it is an idea to turn ordinary brownies into something that looks like you spent a lot of your precious time making.

What you need….only 4 ingredients (well 7 if your brownie mix calls for what mine did)

Brownies with Peppermint Icing

Box Brownie mix + water, oil and eggs to make it.

Tub of Icing (Frosting)

Peppermint Extract

Soft peppermints

That’s it!  Not only does this save you the time, and who really has all that extra time around Christmas time, but it doesn’t cost much at all to make. Maybe $5 if you shop like my husband. Buy it when it’s on sale and then stock up. Who needs to spend extra on food when you have to spend on “gifts”?

Would I change anything about this recipe?

Yes, but you need to be the judge and jury.  I didn’t want to overpower this with the peppermint. And I knew that I would be adding the peppermint extract to the icing. Plus, topping it all off with crushed peppermints. What I thought with this process is that would be enough peppermint without overpowering it.  However, after taking a bite of it, I thought I should have added the peppermint extract to the brownies as well.

Might be too much for you, not sure. But if you do add the peppermint to the brownies, please let me know in the comments how it turned out.  I might just do that next time.

Brownies with Peppermint Icing

Brownies with Peppermint Icing on top. Topped with crushed soft peppermints turn this brownie mix to a easy, little time to make Christmas dessert.

Equipment

  • 9×13 Baking dish

Ingredients

  • 1 Box Brownie Mix + ingredients required
  • 1 12 oz Cream Cheese Frosting
  • 1/8 Tsp Peppermint Extract More if you LOVE peppermint
  • 10 Soft Peppermints

Instructions

  • Preheat oven based on Brownie instructions
  • Follow the steps on the Brownie Box to make your brownies.

  • Pour brownie mix into a 13 x 9 dish. Bake as directed. Cool for 1 – 1 1/2 hours.

  • Add the peppermint extract to the tub of frosting/icing. Stir well. Slather on top of the cooled brownies.

  • Crush Soft Peppermints. Either by hand, or food processor. Sprinkle over Icing.

  • Slice and Serve.
