I wasn’t sure about this Bacon Wrapped Cheesy Tortilla when I found it.  It was in The Better Homes and Garden New Cook Book.  I changed it up a little, of course. I LOVED these, believe it or not. They could either be an appetizer, cut up, or just a simple snack. I really don’t like making too many recipes that I haven’t tried yet if I’m planning on serving at a party or get together.  What if it’s a flop? However, I will make these again!  For sure!

I think a big factor in making the Bacon Wrapped Cheesy Tortillas is how the bacon cooks and if the cheese is melting too fast.  If the cheese melts and the bacon isn’t done, then you may not end up with the “cheesy” part.  If that happens, may I suggest you make some cheese dip…cuz that would be awesome.

Another cool thing about these….10 minutes to prep, 13 minutes to cook. BAH BAM!  Love these recipes that don’t take very long, yet still taste oh so yummy in my tummy.

Bacon Wrapped Cheesy Tortillas

Bacon Wrapped Cheesy Tortillas. 3 Ingredients, less than 25 minutes from start till finished. Perfect for an appetizer or snack.

Equipment

  • 9 x 13 Baking Sheet

Ingredients

  • 9 Slices Bacon 12 slices if you use 2 per tortilla
  • 6 Tortillas, Small (8″-10″)
  • 1/2 Cup Velveeta, cubed

Instructions

  • Preheat oven to 425°
  • Lay out tortilla. Place about 5 cubes or so of Velveeta cheese down the center.

  • Roll up tortilla first by folding in half. Then roll starting from the folded side.
  • Wrap 1 or 2 slices of bacon around the tortilla. I made 3 tortillas with 1 slice and 3 with 2 slices so you could see. I prefer the 2 slices. If you need to secure these, use toothpicks.

  • Place on foil covered cookie sheet.
  • Bake @ 425° for 10 minutes, then flip and cook another 3 minutes. If you need to cook longer after the flip, only go 2 minutes at a time. That bacon can get ahead of you.
