Bacon Cheeseburger Roll Up: A Fun Dinner Using Pizza Dough

Ground beef, bacon, and melty Velveeta wrapped in pizza dough? Yep, we’re rolling cheeseburger night into something a little different! This Bacon Cheeseburger Roll Up is a hamburger log recipe with bacon and cheese tucked inside instead of stacked on a bun.
If you’ve ever wondered, “what can you do with pizza dough” besides make pizza, here’s a delicious place to start. This cheeseburger loaf brings together familiar burger ingredients in a slice-and-serve package. Grab your favorite dipping sauce and let’s roll!
What You Need for This Cheeseburger Loaf
The main ingredients are refrigerated pizza dough, bacon, ground beef, and Velveeta. The dough wraps everything up, the beef forms the hearty filling, and the bacon and cheese bring the cheeseburger personality. No hamburger buns required!
- Refrigerated pizza dough: Keep the package handy for its handling instructions.
- Ground beef: Cook it before adding it to the dough.
- Bacon: Cook and crumble it so you can spread it through the filling.
- Velveeta: Cut it into small pieces for mixing with the beef and bacon.
This post walks through the ingredients and technique rather than supplying a measured recipe card. Use your original recipe’s ingredient amounts and baking instructions when making the loaf.
How to Make a Roll Up Using Pizza Dough
Start by cooking the bacon, then brown the ground beef and drain off excess grease. For food safety, USDA recommends cooking ground beef to an internal temperature of 160°F, checked with a food thermometer. USDA food safety guidance
Let the cooked filling cool briefly while you prepare the dough; don’t leave it sitting out for hours. Mix the beef, crumbled bacon, and cut-up Velveeta, then spread the filling evenly across the dough. Leave a little uncovered dough around the edges so you have room to close the roll.
Roll from a long side, gently keeping the filling inside. Pinch the seam closed and place the loaf seam-side down on your prepared baking sheet. A similar cheeseburger roll-up method from Kraft Heinz uses drained, briefly cooled meat, an uncovered border, and a seam-side-down position. Those are useful assembly tips, not a replacement for this loaf’s original baking instructions. See the Kraft Heinz rolling method

Tips and Tricks for Your Cheeseburger Loaf
- Drain before you roll. Remove excess grease from the cooked beef before mixing the filling.
- Spread, don’t pile. Aim for an even layer rather than one big mound in the middle. Leave the sealing edges clear.
- Keep the seam underneath. Press the dough together along the seam before transferring the loaf.
- Save the sauces for serving. Try ketchup, mustard, or mayo on the side instead of loading the dough with extra sauce.
- Keep your recipe card close. A stuffed loaf is not the same as a flat pizza, so don’t assume the dough package’s plain-pizza baking time will work unchanged.
Fun Facts: A Burger with a Twist
This loaf has a little identity crisis—in the best way! It uses pizza dough, but the filling is all about bacon cheeseburger night. Think of the dough as the bun’s rolled-up cousin.
Another fun detail: the same beef, bacon, and cheese that usually get stacked become a filling you spread and roll. Slice the baked loaf and you get to see the layers instead of hiding them under a bun. Call it a cheeseburger loaf, hamburger log, or Bacon Cheeseburger Roll Up. Around here, I’m calling it dinner!
Serving Suggestions: Bring on the Dips!
Once the Bacon Cheeseburger Roll Up is done, slice it and dig in. I served mine with a pickle and dipped it in mayo. Use whatever condiment makes your burger-loving heart happy, or eat it alone—it’s good that way too!
For a casual dinner, try slices alongside a green salad, coleslaw, fries, or roasted vegetables. For a game-night spread, arrange portions on a platter with pickles and small bowls of ketchup, mustard, mayo, or burger sauce. Keep fresh lettuce and tomato on the side for anyone who wants the full burger experience.
Want to play with the flavor? Try a little barbecue sauce as a dip, or serve jalapeños on the side for a spicy bite. These are serving ideas, not changes to the original filling. Let everyone dress up their own plate!

How Do I Reheat Leftover Bacon Cheeseburger Roll Up?
I like reheating this loaf as slices in the oven for a little more crisp on those inner pieces. You can also use the microwave for convenience. Either way, reheat leftovers to 165°F and check with a food thermometer; a fixed number of minutes won’t guarantee the center is hot enough. In the microwave, cover the food and check several spots for even heating. USDA reheating guidance
Storage Tips: Refrigerator and Freezer
Store leftovers in covered, shallow containers in a refrigerator kept at 40°F or below, and use them within 3–4 days. Refrigerate within 2 hours of cooking or serving, or within 1 hour if the temperature is above 90°F. You don’t need to wait for the loaf to cool completely on the counter: portion it for quicker cooling and refrigerate promptly. USDA leftover storage guidance
For longer storage, seal portions in airtight freezer packaging and label them with the date. USDA’s general guidance is to use frozen leftovers within 3–4 months for quality; that isn’t a texture guarantee for this particular loaf. Thaw in the refrigerator, not on the counter, and reheat to 165°F before serving. USDA freezing and thawing guidance
What Can You Do with Pizza Dough?
If this roll up using pizza dough has you thinking beyond pizza night, try brainstorming other fillings and shapes. Here are a few ideas for your next recipe search—not tested variations of this loaf:
- Pizza pockets: Individual dough parcels with your favorite pizza-inspired filling.
- Garlic breadsticks: A savory side to pair with soup or pasta.
- Breakfast roll-ups: An idea built around cooked eggs, cheese, and breakfast meat.
- Vegetable-and-cheese rolls: A direction to explore with cooked vegetables and cheese.
Different fillings and dough shapes need their own baking instructions. Use a recipe written for the version you want to make rather than swapping ingredients and guessing the timing.

What All Can I Make with Ground Beef?
Thinking, “what all can i make with ground beef” when you open the fridge? Put this bacon cheeseburger loaf on your inspiration list.
