Chili Cheese Dip Oh so EASY!

Most of you probably already know how to make Chili Cheese Dip, but just in case you need a quick, creamy, scoopable appetizer that disappears fast, this one is always worth keeping in your back pocket. Or just for an idea if you never thought of it.

This is another easy appetizer/snack to make. It takes two main ingredients, Velveeta Cheese and Chili, and less than 10 minutes from start to finish. If you like chili and you like cheese dip, this is definitely for YOU! It is warm, comforting, a little messy in the best way, and perfect for game day, movie night, potlucks, cookouts, or those evenings when everyone keeps wandering through the kitchen asking, “Is there anything to snack on?”

What I love most about this dip is that it feels like an old-school party recipe: simple, dependable, and not trying too hard. The Velveeta melts down smooth and creamy, the chili adds heartiness and flavor, and together they make a dip that can be served as an appetizer, snack, or even spooned over something crunchy for a quick chili cheese treat.

Chili cheese dip has that classic party-food personality because it borrows from two comfort food favorites: chili and melted cheese. It is also one of those recipes that can be made differently in almost every kitchen. You can use homemade chili, like I did, or store bought.  Whichever you prefer!  I was making some more chili for my daughter when I thought I’d just pull a cup of it out and make an appetizer as well.  This was a small batch, so, please adjust the serving size on the recipe below for a bigger batch.

Tips and Tricks for the Best Dip

  • Cube the cheese first. Smaller pieces melt faster and more evenly, which helps keep the dip smooth.
  • Use low heat. Velveeta melts easily, but gentle heat keeps it from scorching on the bottom of the pan.
  • Stir often. A few good stirs while it melts will bring the chili and cheese together into one creamy dip.
  • Make it thicker or thinner. Add more chili for a heartier scoop or add a small splash of milk to loosen it up.
  • Add a kick. Stir in diced jalapeños, green chilies, hot sauce, chili powder, cumin, or a pinch of garlic powder if you want extra flavor.
  • Keep it warm for parties. A small slow cooker set to warm is great if the dip will be sitting out during a get together.

Serving Suggestions

Serve with tortilla chips, corn chips, crackers, pretzel bites, toasted bread pieces, or fresh veggies like celery sticks, carrot chips, and bell pepper strips. You can also spoon it over Fritos, nachos, baked potatoes, hot dogs, burgers, fries, or tater tots. Storage and Reheating Tips

If you have leftovers, let the dip cool slightly, then store it in an airtight container in the refrigerator. For best quality and food safety, enjoy refrigerated chili cheese dip within 3 to 4 days. Because this dip contains dairy and chili, avoid leaving it out at room temperature for more than 2 hours. If it has been sitting out too long, or if you notice an odd smell, discoloration, mold, or a slimy texture, it is safest to throw it away.

To reheat, warm it slowly on the stovetop or in the microwave, stirring often. If it thickens up in the fridge, add a small splash of milk and stir until creamy again. You can freeze it if needed, but the texture may change a little after thawing, so I prefer making a smaller batch and enjoying it fresh.

Chili Cheese Dip made with Velveeta cheese and chili. Takes less than 10 minutes and only has 2 ingredients. BAM!

Ingredients

  • 1 Cup Velveeta Cheese, cubed
  • 1 Cup Chili Homemade or Can

Instructions

  • Add Velveeta cubes in a small to medium size bowl.

  • Add in the chili and microwave 1 – 1 1/2 minutes. Stir. Any remaining unmelted cheese will most likely melt as your stir and blend.
  • Pour into serving dish OR just eat it out of the bowl. SERVE!
