Want to learn how to make homemade chicken quesadillas? You only need 4 basic ingredients to make a quick, cheesy dinner that tastes like comfort food and comes together fast. Chicken quesadillas are one of those easy meals that work for busy weeknights, casual lunches, game-day snacks, or even a laid-back family dinner. Warm tortillas, melty cheese, tender chicken, and a little onion make a simple base, and from there you can dress them up however you like.

The best part? Quesadillas are forgiving. Use leftover chicken, rotisserie chicken, grilled chicken, or even chicken from another recipe. Add a little seasoning, layer in the cheese, toast everything in a skillet, and dinner is ready before anyone has time to ask, โWhatโs for dinner?โ
Fun facts about quesadillas
- The word โquesadillaโ comes from โqueso,โ which means cheese in Spanish.
- Traditional quesadillas are often made with corn tortillas, but flour tortillas are popular because they fold easily and get nice and crisp in a skillet.
- Quesadillas are perfect for using leftovers because almost any cooked protein, vegetable, or cheese can be tucked inside a tortilla.
What to put in quesadillas?
These chicken quesadillas have chicken, cheese, and onions. So many different quesadillas can be made by swapping out ingredients. The main ingredients are usually meat and cheese, then you can add extras like onions, tomatoes, jalapeรฑos, peppers, corn, black beans, mushrooms, or spinach. Just remember not to overfill them. A thinner layer melts better, flips easier, and keeps the tortilla crisp instead of soggy.
Tips and tricks for the best chicken quesadillas
- Use medium heat. If the skillet is too hot, the tortilla browns before the cheese melts.
- Shred your own cheese if you have time. It usually melts smoother than pre-shredded cheese.
- Place cheese on the tortilla first and last, with chicken in the middle. The cheese acts like glue and helps hold everything together.
- Let the quesadilla rest for a minute before cutting. This keeps the filling from sliding out.
- Use a pizza cutter for clean wedges. It is quick, easy, and less messy than a knife.

What goes with chicken quesadillas?
Rice, refried beans, bean salad, guacamole, salsa, sour cream, pico de gallo, tortilla soup, or a simple green salad are all great side dishes for chicken quesadillas. If you are serving them as an appetizer, cut each quesadilla into smaller wedges and set out little bowls of dipping sauces so everyone can pick their favorite.
Serving suggestions
- For dinner: Serve with Mexican rice, beans, and a scoop of guacamole.
- For a party: Slice into triangles and arrange on a platter with salsa, queso, sour cream, and jalapeรฑos.
- For lunch: Pair with a side salad or fruit for something lighter.
- For kids: Keep the filling simple with chicken and cheese, then let them dip the wedges in ranch, salsa, or sour cream.
Whatโs the best cheese to use for quesadillas?
I used shredded cheddar jack cheese in the chicken quesadillas because it melts nicely and has great flavor. However, here are a few more ideasโฆ.
- Shredded cheddar cheese
- Mexican blend shredded cheese (good choice)
- Oaxaca (melts very easily)
A good melting cheese makes a big difference. Monterey Jack, cheddar jack, Mexican blend, and Oaxaca are all tasty options. If you like a stronger flavor, mix sharp cheddar with a milder cheese so you get both flavor and melt.

How to store leftover chicken quesadillas
Let leftover quesadillas cool completely before storing them. Place wedges in an airtight container or wrap them tightly and refrigerate for 3 to 4 days. For the crispiest reheated tortilla, warm them in a skillet, oven, toaster oven, or air fryer instead of the microwave. The microwave works when you are in a hurry, but it can make the tortilla softer.
You can also prep quesadillas ahead of time. Keep the cooked chicken and toppings separate in the refrigerator, then assemble and cook when ready. This helps prevent the tortilla from getting damp. If freezing, wrap cooked quesadilla wedges individually and freeze for up to 3 months. Reheat from frozen in the oven or air fryer until hot and crisp.
Make it your own
Once you have the basic method down, it is easy to change the flavor. Add taco seasoning for a classic Tex-Mex taste, buffalo sauce for a spicy twist, barbecue sauce for a smoky-sweet version, or fajita veggies for extra color. You can even make breakfast quesadillas with scrambled eggs, chicken, cheese, and peppers.
