I’m back with recipes after a hiatus for about 3 weeks and look what I have for you.  One of my throw together concoctions, Cheesy Sausage and Rice Skillet Bake.  I’m known for throwing things together and calling it a meal.  It’s the best way to roll sometimes.

This time I sliced up some turkey sausage links, mixed them with cheddar cheese soup, rice and corn in my skillet.  Then I threw (well, not really) the skillet in the oven and baked it for about 20 minutes.  This was a huge hit!

The sweet corn really made this dish, but you could either skip it, or replace it with your favorite veggie.  I used corn because my prego daughter loves corn ESPECIALLY when she’s pregnant.  She had been eyeballing my corn in the freezer and I had to keep her from eating it.

Cheesy Sausage and Rice Skillet Bake

Cheesy Sausage and Rice Skillet Bake. Turkey sausage, cheddar cheese soup, rice and sweet corn make up this tasty skillet bake.

Equipment

  • Rice Cooker / Instant Pot
  • Sauce Pan
  • Cast Iron Skillet

Ingredients

  • 1 Boil-in-Bag Rice
  • 4 Tbsp Olive oil
  • 2 Pkg Turkey Sausage Link
  • 1 Can – 10 3/4 oz Condensed Cheddar Cheese Soup
  • 1/2 Soup Can Milk
  • 2 Cup Sweet Corn, Frozen
  • 2 Cup Shredded Cheddar Cheese
  • Salt & Pepper To Taste

Instructions

  • Preheat oven to 425°.
  • Place the rice in water in a medium saucepan, bring to boil and cook 8-10 minutes. While your rice is cooking, keep going with the recipe.
  • Slice sausage.

  • Mix Milk and Cheddar Cheese soup in a small/medium bowl.

  • Heat olive oil in skillet on medium high heat. Add sausage and cook for 5 minutes.
  • Add corn and soup mix to skillet. Continue cooking for another 5 minutes.

  • Add cooked rice to skillet. Mix well.
  • Place skillet in preheated oven. Cook for 20-30 minutes.

  • Sprinkle shredded cheese on top and let stand for 10 minutes to cool and for cheese to melt.
  • Chow down!
