Strawberry NO BAKE Cheesecake
Here’s ya another awesome NO BAKE, Strawberry Cheesecake. Have I said before how much I love NO BAKE cheesecakes? If not, here I go again. I love.love.love NO BAKE cheesecakes more than any other cheesecake, or dessert for that matter. I’ve even let it surpass my favorite of all time Apple Pie. I know, what am I thinking? But these babies are so easy, don’t heat up your kitchen and taste AMAZING! Winner!

They’re great for summer. Take one to your next gathering and be the rock star of the show. I haven’t had one yet that no one liked. In fact, all of them have ROCKED!
My Mom was in town visiting and she asked how come I never make these cheesecakes when she is around. She sees me post them all over social media, but never gets any of it. I asked her what her favorite one would be and it just so happens she chose Strawberry and I haven’t made a strawberry one yet. Lucky her!

Fun Facts About No Bake Strawberry Cheesecake
No bake cheesecakes are a little bit of kitchen magic. Instead of using eggs and oven heat to set the filling, they rely on cold cream cheese, whipped ingredients, and plenty of chill time. That means the refrigerator does most of the work for you. It also means no cracked top, no water bath, and no heating up the kitchen when the weather is already hot enough to make everyone cranky.
Strawberries are especially perfect in a chilled cheesecake because they bring that sweet-tart berry flavor that keeps the dessert from feeling too heavy. They also make the whole thing look pretty without you having to be a professional decorator. Slice a few berries, pile them on top, and boom, dessert looks like it came from a bakery case.
Another fun thing about no bake cheesecake is how flexible it is. - Press the crust firmly. Use the bottom of a measuring cup or glass to pack the crust down so it slices better later.
- Use a sharp knife for clean slices. Wipe the knife between cuts if you want pretty pieces for company.
If your cheesecake seems a little soft, don’t panic right away. It may just need more time to chill. No bake cheesecakes are not instant desserts, even though they are easy desserts. Mix it, chill it, walk away, and let that refrigerator earn its keep.
Serving Suggestions
This Strawberry Cheesecake is perfect for summer cookouts, family dinners, church potlucks, birthday parties, baby showers, or any day when you need a dessert that looks like you tried really hard but didn’t actually have to stand over a hot oven. Serve it cold, right from the fridge, with extra strawberries on top or on the side.
You can dress up each slice with whipped cream, strawberry sauce, chocolate drizzle, crushed graham crackers, lemon zest, mini chocolate chips, or even a scoop of vanilla ice cream if you are feeling extra. Thaw in the refrigerator before serving. The texture may be slightly softer after freezing, but it is still a handy trick when you want dessert ready for another day.
One more little tip: if you are making this for an event, make it the day before. Not only does that save you stress on party day, but the cheesecake has more time to set up and the flavors have more time to settle together. Easy dessert plus less stress? Yes, please.

Strawberry NO BAKE Cheesecake
Equipment
- Springform Pan
- Stand Mixer/Hand Mixer
Ingredients
- 2 Cup Graham Crackers, crushed
- 6 Tbsp butter, melted
- 1/4 Cup Sugar
- 1 Can (21 oz) Strawberry Pie Filling
- 2 Pkg (8oz) Cream Cheese, Softened
- 8 oz Cool Whip
- 6 Strawberries, sliced Optional
Instructions
- Mix graham crackers, butter and sugar in a bowl. Press down into springform pan or deep pie dish to create the crust.

- Add remaining ingredients, except the cool whip, in a bowl or stand mixer.

- Blend well.

- Fold in the cool whip.

- Spoon into the pan/dish. Pat down as well as possible. Refrigerate for at least 4 hours to overnight. I personally prefer overnight.

- When cheesecake has set, remove outer ring, if using the springform pan. Add sliced strawberries on top, if desired. Serve.
