Do you know all the benefits of homemade chicken noodle soup? Let me enlighten you some. Store bought cans of chicken noodle soup are high in sodium. Homemade soup can be made with lower sodium ingredients. Watching your calorie intake? Most chicken noodle soups are low in calories. AND the soup is full of vitamins and nutrients AND protein. What’s better when you’re feeling down? Chicken noodle soup. It’s a go to for me.

I was grocery shopping the other day and came across a can of mixed vegetables. Normally when you see mixed vegetables, it consists of carrots, peas and corn. Something similar to that. Check out the can I found. I bought two of them, one was low sodium and the other was regular. But I loved the mix of vegetables in it. I knew I’d be making some soup with it.

Isn’t that an awesome mix of veggies? Perfect!

Homemade Chicken Noodle Soup
Equipment
- 4-6 Quart Sauce Pan
Ingredients
- 3 Chicken Breasts, Large
- 6 Cups Water
- 1 Cup Chicken Stock
- 4 Cups Egg Noodles
- 2 Cans (15 oz) Mixed Vegetables, Drained
Instructions
- Boil chicken breasts in water till done (180°). Remove 2 cups of water (if desired). Shred chicken. **I use a potato masher. Just press down on the chicken and twist. Repeat until chicken is the size you prefer.
- Add chicken stock. Bring water back to a boil. Once boiling, add noodles and cook until tender. About 7 minutes.
- Once noodles are cooked through, add vegetables and desired seasoning. Cover. Bring back to boil, then immediately simmer for 30 minutes.
