Ham and Potato Scramble

Ham, potatoes, cheese and eggs = Ham and Potato Scramble.  Great combination in my book.  Great thing about breakfast foods is you can eat it no matter what time of day it is.  This happened to be a late breakfast for me. I actually ate it for lunch.  I had a granola bar in the morning that held me over, but I was still craving some breakfast foods.

Not sure if you notice my coffee cup there.  But, I had another round of coffee with it.  First, coffee just goes good with breakfast. Second, I was in need of some serious caffeine at the time.  Why not?  I don’t do it too often. Wink.

How I made it…

All I did was throw some frozen diced potatoes in a skillet, cooked them up.  Then I drained them…threw them back in the skillet with my diced ham.  Let the ham heat up for about 5 minutes.  Poured the eggs in there, then added the cheese.  Another easy peasy meal.  Now, I cooked this for 3 people.  My normal rule of thumb when making eggs, is 2 per person. Take in account what else you’re adding to the eggs thought. If you want to cut it back to just two you could just drop 2 of the eggs, a tad bit of the potatoes and ham and the cheese.  Just adjust the serving size on the recipe below.

I also wanted to add some onions, but since my daughter, Sarah was eating with me, I didn’t for her sake.  She won’t always be that lucky.

Ham and Potato Scramble

Ham and Potato Scramble. Scrambled eggs with ham, potato and cheese. Quick and easy breakfast.

Equipment

  • Cast Iron Skillet

Ingredients

  • 1 Cup Frozen potatoes, diced
  • 1 Cup Ham, Diced
  • 6 Eggs, beaten
  • 6 Slices Cheese, American
  • 3 Tbsp Oil
  • Seasoning To Taste

Instructions

  • Heat oil in skillet on medium high heat.

  • Add potatoes to the oil and cook fro about 9-10 minutes or until they start to get slightly crispy. Season, if desired. Drain on paper towels.

  • Remove excess oil and only leave a thin layer if you have excess oil.
  • Add the potatoes with the ham back in the skillet. Cook for about 5 minutes to heat up the ham.
  • Pour in beaten eggs.
  • Add in cheese. You can add by the whole slice, or fold over in fours. Using a spatula, stir the eggs to get the cheese mixed in well. Stir and flip the eggs over every minute or so to thoroughly cook through. Cook 5-6 minutes, or until the eggs are cook to your liking. Serve.
