Ingredients
1CupFrozen potatoes, diced
1CupHam, Diced
6Eggs, beaten
6SlicesCheese, American
3TbspOil
SeasoningTo Taste
Instructions
Heat oil in skillet on medium high heat.
Add potatoes to the oil and cook fro about 9-10 minutes or until they start to get slightly crispy. Season, if desired. Drain on paper towels.
Remove excess oil and only leave a thin layer if you have excess oil.
Add the potatoes with the ham back in the skillet. Cook for about 5 minutes to heat up the ham.
Pour in beaten eggs.
Add in cheese. You can add by the whole slice, or fold over in fours. Using a spatula, stir the eggs to get the cheese mixed in well. Stir and flip the eggs over every minute or so to thoroughly cook through. Cook 5-6 minutes, or until the eggs are cook to your liking. Serve.
