Guacamole Cheese Dip

With only 3 ingredients and less than 10 minutes to make, this Guacamole Cheese Dip is sure to be a huge hit at any get together. It is creamy, cheesy, a little zesty, and one of those dips that makes people hover around the bowl “just to get one more chip.” Perfect for warm or hot outdoor weather since you serve it warm. No worrying about a cold dip going bad in the heat with this one—just keep it warm, stir it every now and then, and watch it disappear.

If you love queso and guacamole separately, this dip is the best of both worlds. It has the smooth, melty comfort of cheese dip with the cool, creamy flavor of guacamole mixed right in. It works for game day, cookouts, pool parties, taco night, movie night, or those “everybody bring something” gatherings where you need something easy that still feels fun.

This dip came about when I was at a Mexican restaurant one day. My daughter and I always get queso, always. And I usually get one of two meals…either fajitas or fajita salad. Both come with guacamole on the side. My favorite thing to do is scoop up some guacamole on the chip and then drizzle some of the queso on top. They make one of the best combos in my opinion. So, naturally, I had to bring that same idea home and turn it into one easy bowl.

Fun fact: Guacamole has been around a lot longer than football parties and backyard cookouts. It traces back to Mexico, where avocado-based sauces were made long before modern-day party dips became a thing. The word guacamole comes from words meaning avocado sauce, which is pretty much exactly what it is. I love that something so simple has been loved for so long.

This is a small batch, so remember to change up the servings if you are making it for a big ole get together. All you need is 1/2 can of Rotel, 1 lb of Velveeta, and one container of guacamole dip. If you would like to add more Rotel, great. I have to keep it on the down low with my belly. If you want to throw in some jalapenos, perfect. But this is pretty darn good just the way it is.

Tips and Tricks for the Best Guacamole Cheese Dip

  • Cube the cheese first. Cutting the Velveeta into smaller chunks helps it melt faster and more evenly.
  • Drain a little if needed. Rotel adds great flavor, but if you do not want the dip too loose, spoon off a bit of extra liquid before adding it.
  • Add the guacamole last. Melt the cheese and Rotel together first, then stir in the guacamole so the avocado flavor stays fresh and creamy.
  • Keep it warm for parties. A small slow cooker on warm is perfect once the dip is melted. Give it a stir every so often to keep it smooth.
  • Make it your own. Add jalapenos, taco meat, cooked sausage, cilantro, lime juice, diced onions, or extra tomatoes if you want to dress it up.

How to Serve It

Tortilla chips are the obvious choice, but don’t stop there. This dip is great with taquitos, mini tacos, quesadilla wedges, nachos, soft pretzels, toasted pita chips, or even spooned over baked potatoes. You can also use it as a topping for burgers, hot dogs, grilled chicken, or taco salad. If you are setting it out for a party, put the chips in a wide bowl next to the dip and keep a spoon nearby for anyone who wants to drizzle it instead of dip.

Fun Ways to Change It Up

For a spicier version, use hot Rotel and add chopped jalapenos. For a heartier version, stir in cooked ground beef, taco-seasoned chicken, or crumbled chorizo. For a fresher version, top the finished dip with diced tomatoes, chopped cilantro, green onions, or a squeeze of lime. If you like smoky flavor, add a pinch of smoked paprika or a spoonful of roasted green chiles.

Another fun trick is to turn it into loaded nachos. Spread chips on a platter, drizzle the warm dip over the top, then add shredded lettuce, tomatoes, sour cream, salsa, and any leftover taco meat. It becomes a quick dinner or a party tray without much extra effort.

Make-Ahead and Leftover Tips

You can prep this dip ahead by cubing the cheese and measuring out the Rotel. When it is close to serving time, melt everything together and stir in the guacamole. Leftovers can be stored in the refrigerator in a covered container. The color may darken a little because avocado naturally reacts with air, but a good stir usually brings everything back together. Reheat slowly in the microwave or on the stove, adding a splash of milk if the dip needs loosening.

Party tip: If this is going outside, serve smaller amounts at a time and refill the bowl as needed. That keeps the dip looking fresh and helps everyone get a warm, creamy scoop. It also gives you a chance to stir it before setting out the next round.

Ingredients

  • 1/2 Can (10 oz) Rotel
  • 1 Pkg (16 oz) Velveeta Cheese
  • 1 Container (12 oz) Guacamole Dip

Instructions

  • Pour Rotel in a medium size microwavable bowl.

  • Cut Velveeta cheese into cubes. Add to bowl.

  • Microwave on high for 2 minutes. Remove and stir.

  • Microwave an addition 1-2 minutes (depending on your microwave), or until the cheese has melted.
  • Here’s the guacamole dip I used.
  • Stir in the guacamole to the melted cheese dip. Blend well. Serve!!!

Notes

To reheat, spoon in to a microwavable bowl. Heat on high for 1 minute at a time, stirring in between, until reaches the desired temp.
