Use this simple cheat on making Mexican Rice. Great if you’re short on time and need a quick side dish to your meal.

What’s Mexican Rice called?
Mexican rice can be called Spanish Rice, Red Rice as well as Arroz Rojo.
How do you make Mexican Rice from scratch?
Bring water, tomato sauce, salt and onion/garlic powder to a boil in a medium saucepan. Add your rice and butter. Stir. Reduce to simmer and cover for about 20 minutes or until the rice is tender. Remove from heat, allow to cool for 5 minutes. Stir with a fork. Then serve. We don’t always have time, so, save some with my recipe below.
What is Mexican Rice seasoned with?
It is seasoned with salt and cumin, in addition to onions. In lieu of onions, or in addition to, you could use onion powder.

Easy Mexican Rice
Equipment
- Rice Cooker / Instant Pot
- Sauce Pan
Ingredients
- 2 Cups Rice, Cooked 1 cup uncooked = 2 cups cooked
- 4 Oz Velveeta, Mexican
- 2 Tbsp Milk Add More for desired consistency
Instructions
- Place rice in sauce pan or bowl.

- Cut/Dice the Velveeta Mexican into small cubes.

- Add the cheese & milk to the rice and stir until the cheese is melted.
