Crispy Parmesan Crusted Turkey Strips is a mouthful, huh? In more ways than one. I decided to use turkey instead of chicken to see how it turned out. Using Turkey Breast Cutlets was a great idea if I say so myself.
I love.love.love the crust. It turned out tasty and crispy, hence the name. I was eating the crumbs of the crust that would fall off during the cooking process it tasted so good. Am I the only one that loves crust from fried foods?
Seems like this would take awhile to cook, but the only way it will take long would be if you have a small skillet. If you have a big one, you could get this done in one batch. Mine took 3 batches, but I used a medium size skillet. I think that the 2nd and 3rd batches turned out a little tastier than the first. The flavors just increase in the oil the more you cook.
Make sure you check the temp on the turkey being poultry. You want to make sure it’s cook through.
Oh, and I used my new found avocado oil for a little more flavoring. You could use whatever oil you prefer. Coconut oil would be great too, especially if you have to make more than 2 or 3 batches. I’ll have to try that next time.

Mix Panko, parmesan, parsley, onion powder, salt and pepper in another shallow dish. Or you could mix in a large ziploc baggie.
Pour enough oil in a skillet till it’s about 1/8″ deep. Heat oil to medium high heat.
Dip turkey strips in the beaten eggs, then in the panko mix and then back in the eggs.
Place in heated oil and cook about 5 minutes on each side.
Place on paper towels to soak some of the grease. Serve.
