
Chicken Fajita Melts
Talk about easy. Take some french bread slices, top with butter, fajita meat and cheese. Stick it in the oven and BAM…Chicken Fajita Melts.
This took me tops, 15 minutes from start to finish. Of course, I cheated and used store bought french bread and cooked chicken fajita meat. It has to be that way sometimes.
My daughter and I came up with this and it actually tastes better, in my opinion, than a chicken fajita. If you’re askin’. Nothing makes me happier than some good ole food that comes together in a flash. What’s better than that? The thicker bread versus a tortilla made the difference. The taste is almost the same as chicken fajita in a tortilla, just more dough. Add some garlic salt, onion powder or garlic to make it even tastier.

Versatile
These are very versatile. You could serve as appetizers. You could eat them as snacks. OR, if you’re like me, you could eat for dinner. I was full after just two. Ours was pretty plain, but you could add peppers, sour cream, guacamole and/or salsa. The choice is yours!

Chicken Fajita Melts
Equipment
- 9 x 13 Baking Sheet
Ingredients
- 5 Slices French Bread
- 1 1/4 Cup Chicken Fajita Meat, chopped
- 1 1/4 Cup Shredded Cheese
- 5 Tbsp Butter
- Seasoning Optional
Instructions
- Preheat oven to 400°. Arrange slices of bread on a baking sheet. I used my toaster oven since I was only making 5.Using 1 tbsp butter on each slice. Butter the bread.

- Cut the meat into smaller pieces if you buy the store bought brand.

- Add 1/4 cup of meat to each slice.

- Add 1/4 cup of cheese onto of the meat.

- Bake 8-10 minutes. Serve.
