I decided to change things up a bit with my breakfast casseroles. So, I made a Breakfast Skillet Bake. I love cooking in my cast iron skillets, they give food such a unique taste.  Cast iron skillets are known to boost your iron intake from eating foods in your cast iron skillet. Did you know that? That alone is a good reason to go buy one if you don’t already own one.  I’ll be here when you get back.

From Breads to Sauces to Burgers.

Back to the Breakfast Skillet Bake.  This took me 5 minutes to prepare.  Yes, I cheated and used some pre-cooked foods.  Hey, don’t judge.  Look at the time it gave me to do other things.  Throw all your ingredients in a bowl, stir and then pour the bowl into the skillet.  Place in the oven and you’re pretty much done.  Not many recipes like that.

I used a smaller 8″ cast iron skillet and the serving size came to be 2-4 people. Depends on what you’re serving along side of it.  But, you could use a bigger skillet and feed many more.  Just up the serving size on the recipe below.  I just had a cup of fruit cocktail with mine.

Breakfast Skillet Bake

Breakfast Skillet Bake. Traditional Breakfast Egg Casserole, but baked in a cast iron skillet.

Equipment

  • Cast Iron Skillet

Ingredients

  • 6 Eggs, beaten
  • 1/2 Cup Turkey Sausage Crumbles, cooked
  • 1 Cup Diced Potatoes, Frozen
  • 1 Cup Shredded Cheese
  • Salt and Pepper To taste
  • Green Onions, Chopped Optional

Instructions

  • Preheat oven to 400°.
  • In a bowl, combine eggs, sausage, potatoes and 1/2 cup of cheese.

  • Pour into the cast iron skillet.

  • Bake in preheated oven for 30 minutes or until a knife inserted in the middle comes out clean.

  • Sprinkle remaining cheese over top. I did a little more than called for. 🙂
  • Add chopped green onions if desired. Let sit for 10 minutes. Serve.
