Ingredients
6Eggs, beaten
1/2CupTurkey Sausage Crumbles, cooked
1CupDiced Potatoes, Frozen
1CupShredded Cheese
Salt and PepperTo taste
Green Onions, ChoppedOptional
Instructions
Preheat oven to 400°.
In a bowl, combine eggs, sausage, potatoes and 1/2 cup of cheese.
Pour into the cast iron skillet.
Bake in preheated oven for 30 minutes or until a knife inserted in the middle comes out clean.
Sprinkle remaining cheese over top. I did a little more than called for. :)
Add chopped green onions if desired. Let sit for 10 minutes. Serve.
