Banana Peanut Butter Bread is such an easy dish, with just a hint of the peanut butter, to make and a great way to use up those bananas that are about to go bad. Banana bread doesn’t have to be made as a loaf, you can also make banana bread into muffins.

Ok…don’t freak out on me…but this Banana Peanut Butter Bread is from scratch. I didn’t cheat this time like I normally do. So, if you’re looking for my cake mix recipes…sorry…this one isn’t it.
I decided to make this instead of throwing my bananas away or freezing them. I didn’t have a cake mix on hand…gasp! So, I went the old fashioned way. Made it by hand. It seems like a lot, but you probably have all the ingredients on hand, except maybe the ripe bananas. And if you have bananas, just wait a couple days and you’ll be good to go.
Do you think I should have added nuts?
Will banana bread rise?
Yes, yes it will.
How long will banana bread last?
Left at room temperature, the bread will last 1-2 days. However, if kept in the refrigerator, the bread will last up to 1 week.
How do you keep banana bread moist?
My suggestion is to keep the bread in an airtight plastic container, or a sealed baggie to keep it from drying up.

Banana Peanut Butter Bread
Equipment
- 8 1/2 x 4 1/2 loaf pan
- Stand Mixer/Hand Mixer
Ingredients
- 2 Cup All purpose flour
- 3/4 Tsp Baking Soda
- 1/2 Tsp Salt
- 1 Cup Sugar
- 1/4 Cup Butter, Softened
- 2 Eggs, Large
- 1 1/2 Cup Bananas, Ripe, Mashed About 3-4 Bananas
- 1/3 Cup Peanut Butter
- 1 Tsp vanilla
- Cooking Spray
Instructions
- Preheat oven to 350°.
- Combine flour, baking soda & salt. Stir with whisk in medium bowl.

- Beat sugar & butter in large bowl on medium speed until blended.

- Add eggs, 1 at a time, beating after each.

- Add mashed bananas, peanut butter & vanilla. Beat until blended well. **I totally got into making this and forgot to take the picture at this stage ;( Sorry!
- Add flour mixture and beat on low until moistened.

- Spoon batter into 8 1/2 x 4 1/2 loaf pan coated with cooking spray.

- Bake for 1 hour or until a toothpick inserted comes out clean.

- Cool for 10 minutes in pan. Remove from pan and cool completely for about an hour on wire rack.
