Ultimate Peanut Butter Cookies

Talk about the ultimate…this ultimate peanut butter cookie has tons, and I mean tons of white chocolate chips and macadamia nuts (my fav). Macadamia nuts.  Love.love.love macadamia nuts. Why do they have to be so expensive?

It ended up very sweet.  And mixing the dough with the chips and nuts is a workout. So, you don’t have to feel so guilty when you eat the cookies.

As usual, I cheated and used a cookie mix with this recipe. Makes life so much easier for me.  So, all you need it the mix, ingredients that go with the recipe, white chocolate chips and macadamia nuts.  Quick prep and quick bake.

Ultimate Peanut Butter Cookies

If you like, you can half the white chocolate chips if you prefer. But, may I suggest not too….cuz they’re awesome!!

Ultimate Peanut Butter Cookies

Ultimate Peanut Butter Cookies. Peanut Butter Cookie Mix with white chocolate chips and macadamia nuts.

Equipment

  • 9 x 13 Baking Sheet
  • Stand Mixer/Hand Mixer

Ingredients

  • 21 Oz – Pkg Betty Crocker Peanut Butter Cookie Mix
  • 2 Cups White Chocolate Chips 12 oz bag
  • 8 Oz Chopped Macadamia Nuts
  • 3 Tbsp Vegetable Oil
  • 2 Tsp Water
  • 1 Egg

Instructions

  • Preheat oven to 375°. Spray cookie sheet with cooking spray.
  • Smash macadamia nuts some more. Unless you found some that were already smashed. Eat some.
    Ultimate Peanut Butter Cookies
  • Prepare cookie mix as directed. Use mix, oil, water and egg.
  • Fold in white chocolate chips and macadamia nuts. Eat a couple white chocolate chips. Here is where you will get the workout that will allow you to eat several of these cookies and it won’t count. 😉

  • Roll dough into 1 – 1 1/2″ balls. Place on cookie sheet about 2″ apart and flatten.

  • Bake 8-10 minutes. Let cool on cookie sheet 5-10 minutes. Then transfer to plate and eat one, or two or three.

    And mixes aren’t cheating. In fact, they take the planning ahead to buy a mix. I don’t know how many times I make stuff from scratch just because I don’t happen to have a mix on hand and I wouldn’t want to run 3/4 mile away to buy one…
