Peanut Butter and Jelly Cookie Cups would be great for the kids.  They would love to come home from school and snack on these babies.

Recently, I’ve been asked about some of the desserts I make being so kid friendly when I don’t have little ones at home. First, I’m a big kid.  I still watch kiddie/Disney/Pixar movies. And if that’s not good enough…..I have grandkids.  Quite a bit of what I make gets eaten when they come visit or I send it home for them. So there…if you don’t believe me, just ask.

More about the cups..

I thought I’d be clever and make the “indention” before baking.  May I suggest that you wait about 7 minutes before they’re done and then make the indent. You can use whatever fits. I would still push the dough down in the muffin cup. I used the mini-muffin pan, so I had this drink stirrer that has a ball on the end (you’ll see it in the picture) and was able to just swirl it.

Peanut Butter and Jelly Cookie Cups

Easy 2 ingredient treat for all of those peanut butter and jelly lovers.

Equipment

  • Mini Muffin Tin

Ingredients

  • 1 Pkg Peanut Butter Cookie Dough
  • Jelly, your choice

Instructions

  • Preheat oven to 350°. Spray muffin pan with cooking spray.
  • Cut slices of the dough about 1/4″ thick. Then cut each slice in half.

  • Roll into balls and place the ball into the muffin cup in the pan.

  • Bake for 10 minutes, then pull out of oven. See how the indention isn’t there from me making it before cooking. You can do both if you like, before and after. You see my results.

  • Make the indent in the middle of the cookie using whatever utensil that will fit. Cook for an additional 5-7 minutes. **Remember that the cookie will still cook some after removing it from the oven.
  • Fill with jelly now, or when serving.
