Meatloaf Cups topped with Mashed Potatoes

Meatloaf Cups. Genius! Meatloaf on bottom + mashed potatoes on top = whole meal in a cup.  My daughter came across a picture of meatloaf topped with mashed potatoes in a cup and asked if I thought I could make it.  Duh!  Pretty easy right?

I made a modified version of My Meatloaf and baked them in a cupcake pan, liners optional.  Then cheated, of course, and made instant mashed potatoes. Spooned some on top and there you have it.  I was going to make homemade mashed taters, like I have for many years, but I wasn’t feeling great and I had to use the meat up and not chance it going bad. So, I sucked it up and made the meal for her. She’s welcome 😉

I took it just one step further and added some brown gravy.  This was easy to do.  In this recipe, I used 1/2 packet of brown gravy mix.  So, all I did was take the other half and combine it with 1/2 cup of water.  Cooked in on the stove as directed.  You can also cook the gravy mix in the microwave.  But I was waiting on the potatoes anyway…why not?

Look at that.  You’re whole meal in one bite.  I should have mixed in some corn.  I mean, corn and mashed potatoes & gravy just have to be mixed. Who else eats it that way?

Ingredients

  • 1 Lb Ground Beef
  • 1 1/2 Cups Crackers, Crushed
  • 2 Tbsp Worchestershire Sauce
  • 1/2 Pkg Brown Gravy Mix, Dry
  • 2 Eggs, beaten
  • 1 Tsp Lawry’s Seasoning Salt
  • 1/2 Tsp Pepper
  • 2 Cups Mashed Potatoes Can be homemade or instant

Instructions

  • Preheat oven to 400°
  • Mix ground beef, crackers, worchestershire sauce, gravy mix, eggs, Lawry’s and pepper in a medium size bowl.

  • Place liners in cupcake pan. If you choose not to use the liners, spray all the cups with non-stick spray. Recipe makes 12 cups. Serving size is 2 cups.
  • Fill the liners/cups about 3/4 full with the meatloaf mixture.

  • Bake in preheated oven for 17-19 minutes. Remove from oven when done and top with 1-2 tbsp of mashed potatoes. Let sit 5-10 minutes. Top with gravy if desired.

Notes

GRAVY:
Use the left over 1/2 packet of dry gravy mix and whisk in 1/2 cup of water.  Bring to boil. Reduce heat and simmer for about 5 minutes. Drizzle over Meatloaf Cups.
