Why eat regular mashed potatoes when you can have Loaded HOMEMADE Mashed Potatoes?  Ok, maybe when you have a big meal.  Other than that…these are the bomb.  And they are easier to eat than a Loaded Baked Potato.

My tummy gives me trouble here and there.  When it does, I try to eat softer food.  But I didn’t want plain ole mashed potatoes. So, I made these.  This is also a great comfort food. And I needed some comforting.

Pork or Turkey?

I used turkey bacon in lieu of pork bacon since I didn’t want a bunch of grease.  HOWEVER, I would have preferred the pork bacon.  May I suggest if you can eat it, that’s what you use with these Loaded HOMEMADE Mashed Potatoes.

Oh, and did you notice, I didn’t take the easy route this time?  I didn’t use box mashed potatoes.  Made the real deal.  And I was real excited to use my home grown chives.

Loaded HOMEMADE Mashed Potatoes

Loaded HOMEMADE Mashed Potatoes. Homemade mashed potatoes topped with butter, bacon, cheese, sour cream and chives.

Equipment

  • 3-4 Quart Saucepan

Ingredients

  • 4 Russet Potatoes, peeled
  • 4 Slices Turkey Bacon
  • 4 Tbsp Butter
  • 3/4 Cup Milk
  • 4 Tbsp Sour Cream
  • 1/2 Cup Cheddar Cheese, Shredded
  • Chives, chopped

Instructions

  • Cut potatoes. The smaller you cut them, the faster they cook.

  • Pour about 5-6 cups of water in a medium size sauce pan. Add potatoes. Bring to a boil. Cook about 15-20 minutes or until potatoes are very tender.

  • While potatoes are boiling, fry bacon. Drain. Crumble.
  • Drain potatoes and place back in sauce pan.
  • Add 2 tbsp of butter and the milk. Mashed with a potato masher or electric mixer.

  • Spoon helping onto plate. Add the other 1 tbsp of butter one helping.
  • Add half of the bacon.

  • Add 1/4 of the cheese.

  • Add 2 Tbsp of sour cream and a sprinkle of chives. Repeat for 2nd helping.
