
Lemon Bars
My daughter requested some of these Lemon Bars. I can’t eat them, soooo, I can’t tell you first hand how they turned out. But, she did give it two thumbs up. Barely. She was holding a lemon bar in her hand.

Never made this before, so I got the recipe from Land o Lakes. Follow it to a T, other than using the Land o Lakes eggs. I don’t think I’ve ever seen Land o Lake eggs. Have you? If so, let me know where. The recipe stated I would end up with 18 bars. And you will, if you cut them smaller. However, I ended up with 9 squares.

Very easy, in fact, a lot easier to make than I thought it would be. These would be perfect to take to a school function, family get together, maybe even a potluck, or Church. You will need a little time for them to cool before serving. So, keep that in mind when you plan your serving time.

Lemon Bars
Equipment
- 8×8 baking dish or 8×8 cake pan
- Stand Mixer/Hand Mixer
Ingredients
- 1 1/3 Cup Flour, All Purpose
- 1/4 Cup Sugar
- 1/2 Cup Butter, Softened 1 stick
- 2 Eggs
- 3/4 Cup Sugar
- 2 Tbsp Flour, All Purpose
- 1/4 Tsp Baking Powder
- 3 Tbsp Lemon Juice
- Powdered Sugar Optional
Instructions
- Preheat oven to 350°. Grease or spray an 8×8 baking pan.
- Combine 1 1/3 cup of flour, 1/4 cup sugar, 1/2 cup of butter in a medium bowl. Beat on low speed until combine. Will be crumbly.
- Press flour mixture in the baking pan. Bake 15-20 minutes or until edges are a light brown.
- While the crust is baking. Combine the eggs, 3/4 cup sugar, 2 tbsp flour, 1/4 tsp baking powder and lemon juice in a bowl. Beat on low speed until well mixed.
- Pour lemon mixture over hot, partially baked crust.
- Continue baking for another 18-20 minutes or until the filling is set.
- Dust with powder sugar if desired. You could garnish with some lemon zest too. Allow to cool completely. At least 30 minutes. Cut into bars. NOTE: Depending on how you cut will depend on how many servings. Anywhere from 9 to 18 bars.
