Brownie Cookies

Brownie Cookies are a simple and quick way to change up how you use your Brownie Mix. With a couple changes to the ingredients, you can turn your brownies into cookies. Only took me about 5 minutes to prepare, then bake the cookies however you want. Big, small or in between. I ended up with 36 – 3 batches of 12.

To me, cookies go further than brownies. Brownies tend to be thicker, therefore, you don’t get as many. With the cookies, you end up with more. Plus, when you cut the brownies up, you end up with brownie crumbs most of the time. With cookies, you don’t.

Crunchy or Chewy?

You can also choose if you want them chewy, or in my case, a little on the crunchy side. I am one of those weirdos that like the corner and edge pieces of the brownies. Whereas, most people go for the middle. I like a little crunch to mine.

So, it basically boils down to what occasion you are making them for and how you want to serve them. Top them off with some powdered sugar to keep that “brownie” look.

Brownie Cookies

Brownie Cookies. Make cookies from your boxed brownie mix for a different way to serve and eat brownies.

Prep Time 5 minutes
Cook Time 36 minutes
Total Time 1 hour 2 minutes
Servings 28 Cookies

Ingredients

  • 1 Pkg Brownie Mix
  • 1/4 Cup Water
  • 1/4 Cup Vegetable Oil
  • 1 Egg
  • Powdered Sugar

Instructions

  • Preheat oven to 350°. Spray or line baking sheet.
  • Add all ingredients to a medium to large size bowl. Stir with fork until blended.

  • Scoop a spoonful of brownie mixture onto your baking sheet about 1-2 inches apart depending on how big you’re making them.

  • Bake 10-12 minutes. Or until they reach you're desired done-ness. Don't over bake unless you like them REAL crispy. They will continue to cook some after removing from the oven while cooling on the baking sheet.
  • Immediately from the oven, sprinkle powdered sugar on the cookies. Let cool on baking sheet 7 minutes before transferring to serving dish.
