
Beef Vegetable Noodle Soup
Talk about a hearty soup. Beef Vegetable Noodle Soup is loaded with hamburger meat, yummy veggies and noodles too. Your one stop shop for soup. I wasn’t sure if the combo would turn out how I wanted it to, but it did. Pleased the hubs and the daughter. SCORE!!
This is a large batch. I made a lot of it for leftovers. I love soup leftover. If you need to scale it back some, just adjust the serving size on the recipe below and it will adjust it for you.

I will tell you how my hubs ate it. With a peanut butter and jelly sandwich. Weird, right? He loves to have PB&J sandwiches with certain soups. I think it’s a weird combo, but whatever makes him happy!

Beef Vegetable Noodle Soup
Equipment
- 4-6 Quart Sauce Pan
Ingredients
- 1 Lb Ground Hamburger Meat
- 8 Cups Water
- 1 Can (14.5 oz) Beef Broth
- 1 Can Sweet Whole Kernel Corn, undrained
- 2 Cups Peas & Carrots, Frozen
- 2 Cups Shredded Potatoes Hash Brown type
- 8 Oz Fettuccine, uncooked 1/2 package
- 2 Beef Buillon Cubes
Instructions
- Brown hamburger meat in a large pot. Drain. **You will use the same pot for the soup.
- Break fettuccine in 3rds.
- Add water, broth, bouillon cubes, corn, peas & carrots, potatoes, meat and fettuccine to the pot. Turn heat on high, cover and bring to a boil.
- Boil for 8 minutes, then reduce heat and simmer 30 minutes to an hour.
