
Pecan Sandies
A good friend of the family’s Mom had knee surgery and my daughter wanted to make something for her. Pay back for a cake she had made my daughter. So, she found out that pecan sandies are her favorite cookie. She asked if I would help her make them. And here we are. Might as well post up a recipe for them.

These turned out great. Melt in your mouth great. Plenty of pecan bits. Some pecan sandies don’t have enough if you’re asking.
Quick to mix up
They don’t take long to whip up. But this recipes makes about 8 dozen, depending on how big you make the cookies. So, the main time consumer is taking the batches in and out of the oven every 10 minutes. If you want a smaller batch, just adjust the serving amount on the recipe below and it will adjust the ingredients for you.

Do you have a favorite cookie? I think mine would be a toss up between peanut butter and snickerdoodles. Mmmm I need to make some snickerdoodles.

Pecan Sandies
Equipment
- Stand Mixer/Hand Mixer
- 9 x 13 Baking Sheet
Ingredients
- 1 Cup Butter, Softened 2 sticks
- 1 Cup Vegetable Oil
- 1 Cup White Sugar
- 1 Cup Powder Sugar
- 2 Eggs
- 1 Tsp Vanilla Extract
- 4 Cups Flour
- 1 Tsp Baking Soda
- 1 Tsp Cream of Tartar In Spice Section
- 1 Tsp Salt
- 2 Cups Pecan Bits
- 1/2 Cup White Sugar
Instructions
- Preheat oven to 375°.
- Mix together the butter, vegetable oil, 1 cup of white sugar and powder sugar until smooth. Beat in one egg at a time.
- In a separate, medium bowl, combine the flour, baking soda, cream of tartar and salt.
- Slowly mix the flour mixture into the butter mixture.
- Stir in the pecans.
- Place 1/2 cup of white sugar in a small bowl.
- Roll the dough into 1 inch balls. Roll the cookie dough ball in the sugar. Place on ungreased cookie sheet about 2 inches apart. I just pressed the dough somewhat into a ball.
- Bake for 10-12 minutes, or until the edges start to turn light golden brown. Remove cookies from cookie sheet immediately (and carefully) to cool on a wire rack. **By the time your next batch is done, you can move the cookies into a container or on a serving plate.
I love cookies and I love pecan cookies 🙂 (pecan’s cookies are my aunt’s favorite)
