Ingredients
1CupButter, Softened2 sticks
1CupVegetable Oil
1CupWhite Sugar
1CupPowder Sugar
2Eggs
1TspVanilla Extract
4CupsFlour
1TspBaking Soda
1TspCream of TartarIn Spice Section
1TspSalt
2CupsPecan Bits
1/2CupWhite Sugar
Instructions
Preheat oven to 375°.
Mix together the butter, vegetable oil, 1 cup of white sugar and powder sugar until smooth. Beat in one egg at a time.
In a separate, medium bowl, combine the flour, baking soda, cream of tartar and salt.
Slowly mix the flour mixture into the butter mixture.
Stir in the pecans.
Place 1/2 cup of white sugar in a small bowl.
Roll the dough into 1 inch balls. Roll the cookie dough ball in the sugar. Place on ungreased cookie sheet about 2 inches apart. I just pressed the dough somewhat into a ball.
Bake for 10-12 minutes, or until the edges start to turn light golden brown. Remove cookies from cookie sheet immediately (and carefully) to cool on a wire rack.
**By the time your next batch is done, you can move the cookies into a container or on a serving plate.
