Pour Pie filling into a medium bowl and chop apples to bite size or smaller chunks.
Whisk eggs, milk, vanilla & cinnamon in square or rectangular dish.
Add 2 tbsp of filling to a slice of bread. You will have enough pie filling to double this if you prefer more filling ;)
Place another slice of bread on top. Make a sandwich.
Pinch the edges of the bread together (just inside the crust).
Dip both sides in the egg mixture.
Spray griddle/pan with cooking spray. Place your "sandwich" on the griddle/pan and cook each side 3 minutes or until light brown. Repeat until you have all of your french toast cooking.
OPTIONAL: Place a pat of butter on hot french toast.
OPTIONAL: Pour warm syrup over french toast.
OPTIONAL: Sprinkle with as much powdered sugar as you like.
