Instructions
Heat oil in a 12" skillet on the stove at med-high heat. Sprinkle a drop or two of water to check if hot enough. If it sizzles, it's ready.
Add the flour slowly with one hand while whisking with the other. This will start to create a paste. You want it to get to a light brown color.
Slowly add 2 cups of the milk. Just like when you added the flour. Add with one hand slowly while whisking with the other. Avoid lumps if possible. Once this is mixed, add the other 2 cups of milk, salt and pepper. Cook until it thickens. Decided whether or not you need the final cup of milk. This will depend on how thick it got and how you like your gravy. Serve.
