Pulled Pork Egg Rolls

Here I go again with some egg rolls. This time it’s Pulled Pork Egg Rolls. But, to my defense, this one wasn’t my idea. I think I may have created another monster with egg rolls. A good friend of mine, ahem…Julie…came up with this one. We had some leftover pulled pork from a party and when I said I wonder what I can make with it, she blurted out “Egg Rolls!” quicker than a frog can catch a fly.
That means, if I can make these with left over meat, imagine what other meat or leftovers you can use in egg rolls. My mind has been spinning ever since Julie put this in my head. Yah, thanks Julie!

Cheese or not?
I only used the meat. But, may I suggest that you include some kind of sauce in yours, or something that will help it from being dry. I can’t have the sauce and the Pulled Pork was made with that in mind. You could just make them like I did and have a dipping sauce for whoever likes sauce. That way they can choose how much or if any. However, I think next time I will add some cheese. I wasn’t sure if it would taste good or not with cheese, but after eating them, I know it would.
I also toyed with adding onions, or pickles or relish. Again, hindsight, I will add onions as well as cheese my next go round with these.

Don’t take these suggestions as meaning they weren’t good. They were to me! But you may prefer some BBQ sauce.

Pulled Pork Egg Rolls
Equipment
- Frying Pan
Ingredients
- 8 Egg Roll Wrappers
- 2 Cups Pulled Pork
- Vegetable Oil
Instructions
- Pour enough vegetable oil to fill a skillet 1/8″ – 1/4″ deep. Turn heat on medium high and allow to heat up.
- Heat up pork in microwave about 1 – 2 minutes.
- Place 1/4 cup of meat in the middle of the wrapper.
- Fold up bottom corner.
- Fold in sides of wrapper.
- Roll from bottom up. Try to keep it tight but no so tight it rips the wrapper….like one of mine.
- Place in heated up oil fold side down. Fry 3-4 minutes each side. If you need to flip to get the sides, add additional 2 minutes for each side.
- Place on plate with paper towels to drain. Let cool 5 minutes.
