Megan, my daughter for those of you who don’t know, is in town and made these Chicken Alfredo Stuffed Shells for dinner one night.  She let me write down the recipe and take pics as she was making them.  I have never had these before and they turned out great.  The kids couldn’t get enough of them. Oh, oh, oh….she used Oregano Essential Oils in this.

Finger Food?

It’s like having a meal inside a meal.  I used a fork with these, but I noticed that the kids were just picking them up and eating them with their hands.  To each their own, right?  So, my point is that you could eat this formally or informally.  And that its kid friendly.

Meg wanted me to let you know that you have many options with this dish. For example, she used pre-cooked chicken fajita meat in her recipe.  But you could use chicken breast and season them any way you like. Pick whatever cheese you want to sprinkle on top, or choose no cheese. You could add whatever spices to the sauce you prefer.  She used Oregano Essential Oil, but you could substitute for regular oregano.

Equipment

  • Sauce Pan
  • Blender / Food Processor
  • Frying Pan
  • 9 x 13 Baking Sheet

Ingredients

  • 2 Lbs Chicken Fajita Meat, pre-cooked, shredded
  • 12 Oz Jumbo Shells
  • 2 Jars Alfredo Sauce
  • 1 Drop Oregano Essential Oil
  • Lawry’s Seasoned Salt To Taste
  • Shredded Cheese

Instructions

  • Preheat oven to 350°
  • Boil about 3 quarts of water in a pot. Once boiling, add jumbo shells. Cook as directed. Drain and let cool.
  • Shred Chicken using food processor. Add in skillet with alfredo sauce, oregano essential oil, salt and pepper.

  • Spread about 1/4 cup of the sauce across the bottom of a foil lined 9×13 baking dish.

  • Fill each shell with the sauce and line up in in the baking dish.
  • Sprinkle shredded cheese over the stuffed shells.

  • Bake for 20 minutes in preheated oven. Serve.

Notes

Best if served with a vegetable and garlic or cheese bread.
